Grilled Corn, Peach and Basil Salsa. (via How Sweet It Is)

With the grey skies outside and the impending weather this bright fruit filled salsa is just the ticket for a weekend indoors with a bottle of Musadet and filet of skate.
Grilled Corn, Peach and Basil Salsa (via How Sweet It Is)
makes about 3 cups
4 ears grilled corn, cut off the cob
2 large peaches, chopped
1 large tomato, chopped
1/4 red onion, chopped
6 large basil leaves, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
a few fresh squeezes of lemon juice
Combine all ingredients together and toss. Season with the salt and pepper, then mix again.

Today my fish and chips dream came true at a restaurant in Leith.
We also visited a castle, saw a mask play, went to see the Scottish military band, and ate. a lot. of. food.

STARBUCKS TIP:
I enjoy soy lattes but find that the Starbucks soy milk is too sweet, probably because their soy is vanilla flavored.
Instead, I order a SOY MISTO, which is coffee with a bit of steamed soy milk poured in. It’s usually half the price of a latte too!

Look at what Alexandra from Melbourne, Australia made! Tim Tam-Stuffed Brownies! She says: “It’s chocolate brownie with original tim tams baked inside (and served with vanilla ice cream on top). I’m not sure if you get tim tams in America, but they’re basically an australian biscuit….and the most indulgent treat you can find.”

Hey, Nerds! Did you know you can mix Nerds candy into your favorite cupcake batter to make an even better version of confetti cake? It’s true! Just mix up a basic vanilla batter (my recipe is here), and then stir in 3/4 cups Nerds candy. Fill your cupcake tins 3/4 of the way full and bake for about 23 minutes, until they’re golden brown and the cake springs back when you gently press your finger into the top of it. I finished mine off with vanilla buttercream and an extra sprinkle of the dangerously crunchy candy. CUTE!
